| 4 tbsp olive oil | 1 tbsp dry sherry | |
| 6 garlic cloves, thinly sliced | 8-9 oz (250 g) raw shrimp, shelled and deveined | |
| 1 tsp crushed hot red pepper flakes | salt and freshly groundblack pepper |
Heat the oil in a frying pan over medium-low heat. Add the garlic and pepper flakes and cook gently, stirring, for about 1 minute.
Add the sherry and shrimp, turn up the heat, and cook, stirring occasionally, for 5 minutes or until the juices have reduced by half. Season with salt and freshly ground pepper and serve with crusty bread and a crisp salad.
You can use shell-on shrimp if you prefer for this dish-provide a finger bowl and napkins, though!
