This refreshing light dessert or snack is so easy to make and has a wonderful fresh summer taste. You can substitute almost any berry in this recipe.
Recipe by Rori Trovato; photo by Luca Trovato
|2 pints fresh raspberries||1 teaspoon vanilla extract|
|1/2 cup brown sugar||1/2 cup lemonade|
In a large bowl, combine the raspberries, brown sugar and vanilla and mash with the back of a spoon until all the whole berries have been broken but are not completely pureed. Add the lemonade and mix well.
Pour into a 9x13 glass or metal dish and freeze for 1 hour. Remove and scrape with the back of a fork to form scraped ice. Refreeze and repeat after another hour. Scrape again and serve or place in an air-tight container and allow to slightly defrost before serving.
