S'mores

Nothing says summertime like s'mores! What could be more fun then roasting marshmallows over an open fire, sandwiching them with a bar of chocolate between two graham crackers, and eating 'em up! At your next party this summer, try one of Chef Meryl Klinghoffer's crowd-pleasing recipes that add a touch of sophistication to this childhood favorite.

Inside Out S'mores

8 graham crackers
8 marshmallows
½ cup semi-sweet chocolate chips, melted

Line up 4 graham crackers on a sheet of foil.
Top with 2 marshmallows each.
Place under a broiler for 1-2 minutes until browned.
Top with remaining crackers and press together to set.
Drizzle tops with chocolate.
Makes 4.

Caramel Pecan S'mores

8 graham crackers
¼ cup semi-sweet chocolate chips
¼ cup caramels, chopped
¼ cup chopped pecans
8 marshmallows

Line up 4 graham crackers on a sheet of foil.
Combine chips, caramels and pecans and evenly sprinkle on top of each cracker.
Top with two marshmallows on each.
Place under a broiler for 1-2 minutes until browned.
Top with remaining crackers and press together to set.
Makes 4.
