A great snack at any time of day, these potato sticks are a good way of introducing children to the complex flavours of spices. They make a tasty alternative to shop-bought snacks, which often include artificial flavourings.

| 13 oz (400 g) mashed potato (see step 2; Sausages with Mash and Gravy recipe and double quantity) | a little flour for dusting | |
| 4 oz (125 g) cheddar cheese, grated | a little beaten egg or milk for brushing | |
| 1/2 tsp ground coriander | 1 tbsp seeds such as fennel, caraway, sesame or sunflower, or a combination | |
| 1 egg yolk, beaten |
Preheat the oven to 400°F (200°C).
Mix the mashed potato, cheese, coriander and egg yolk in a bowl. Lightly flour a board or clean work surface. Roll out the potato mixture until about 2.5cm (1in) thick, then cut into finger lengths.
Brush the sticks with beaten egg or milk and roll in the seeds, gently pressing them into the potato to help them stick. Place them on a lightly oiled baking sheet and bake for 10 minutes until crispy and golden.
