|1 package Minute Steamers White RIce||1 cup diced chicken breast, cooked|
|1/2 cup coconut milk||2 tablespoons sweet chili sauce|
|1 teaspoon lime zest||2 tablespoons dry roasted peanuts, chopped|
|1 teaspoon lime juice|
Prepare rice according to package directions.
In a medium bowl combine rice, coconut milk, lime zest and juice. In a medium microwave-safe dish combine chicken and chili sauce. Microwave on HIGH until heated through, about 1-2 minutes.
Serve chicken over rice and top with peanuts.
Tip: Garnish with fresh basil and a lime slice.
