|1 bag Success Jasmine Rice, Success White Rice or Success Brown Rice||2 tablespoons curry powder|
|1 tablespoon oil||3 tomatoes, chopped|
|1 pound boneless skinless chicken breast, diced||salt and ground black pepper, to taste|
|1 medium onion, sliced||fresh cilantro sprigs, optional|
|2 cloves fresh garlic, minced|
Prepare rice according to package directions.
While rice is cooking, heat oil in skillet.
Season chicken with salt and ground black pepper, to taste.
Add remaining ingredients. Simmer for 10 minutes, covered.
Serve over hot cooked rice.
Garnish with fresh cilantro sprigs, if desired.
