|2 bags Success Jasmine Rice or Success White Rice||1/4 teaspoon salt|
|1 cup coconut milk||2 cups cooked chicken, shredded|
|1 tablespoon Thai red curry paste*||1 bag (16 oz.) frozen Asian-style mixed vegetables, thawed|
|2 teaspoons brown sugar, firmly packed||1/2 cup peanuts, chopped (if desired)|
|1 teaspoon lime juice|
Prepare rice according to package directions.
In a small bowl, combine coconut milk, curry paste, brown sugar, lime juice and salt.
In a non-stick pan, over medium heat, combine chicken and vegetables, then add curry sauce.
Cook until heated through.
Place rice in bowls and top with chicken curry mixture.
Garnish with chopped peanuts, if desired.
* Thai red curry paste can be found in the International section at most grocery stores.
Tip: For more flavorful rice, substitute remaining coconut milk for 1 cup of the water when preparing rice.
