| 2 bags Success Jasmine Rice, Success Basmati Rice or Success White Rice | 2 tablespoons peanut butter | |
| 2 tablespoons olive oil | 1/2 cup warm water | |
| 3 boneless skinless chicken breast, cut into small strips | 1/2 cup carrots, cut in matchstick strips | |
| 1 onion, thinly sliced | 2 teaspoons garlic, minced | |
| 2 cubes chicken bouillon, crushed | 1 can (13 1/2 oz.) coconut milk | |
| 1 tablespoon flour | 1 tablespoon brown sugar | |
| 1 tablespoon red curry paste | 1/2 cup peanuts, crushed |
Prepare rice according to package directions.
Heat oil in large skillet over medium heat.
Stir fry chicken and onions for 3-5 minutes.
Dissolve bouillon, flour, curry paste and peanut butter in water.
Add to chicken with carrots, garlic, coconut milk and brown sugar.
Simmer for 10 minutes and serve over rice.
Garnish with crushed peanuts.
