    2 cups Minute White Rice or Minute Brown Rice 1 cup fresh parsley, chopped
    2 medium tomatoes, seeded and chopped 1 cup fresh mint leaves, chopped
    1 medium cucumber, chopped 1 cup zesty Italian dressing
    5 green onions, chopped 1/8 teaspoon ground black pepper

      Prepare rice according to package directions.

      Mix all ingredients except dressing and pepper in large bowl.

      Add dressing and pepper; toss to coat.

      When adding fresh herbs to a chilled recipe, cover and refrigerate the prepared dish for several hours before serving for best flavor.
