|2 cups Minute White Rice or Minute Brown Rice||1 cup fresh parsley, chopped|
|2 medium tomatoes, seeded and chopped||1 cup fresh mint leaves, chopped|
|1 medium cucumber, chopped||1 cup zesty Italian dressing|
|5 green onions, chopped||1/8 teaspoon ground black pepper|
Prepare rice according to package directions.
Mix all ingredients except dressing and pepper in large bowl.
Add dressing and pepper; toss to coat.
When adding fresh herbs to a chilled recipe, cover and refrigerate the prepared dish for several hours before serving for best flavor.
