| 1 bag Success Jasmine Rice, Success White Rice or Success Brown Rice | 1 cup mild salsa | |
| 1 pound seasoned chicken breast, cut into strips | 1 can (15 oz.) black beans, drained and rinsed | |
| 1 can (11 oz.) Mexican-style corn, drained | 1/2 cup jalapeno Monterey Jack cheese, shredded |
Prepare rice according to package directions.
While rice is cooking, heat skillet and spray with non-stick cooking spray.
Add chicken and cook until chicken is no longer pink.
Stir in corn, salsa, beans, and cooked rice.
Sprinkle with cheese.
Heat until cheese is melted.
