    Ingredients

    1 bag Success White Rice, Success Brown Rice, or Success Jasmine Rice 4 poblano peppers, split lengthwise and seeded
    1/4 cup parmesan cheese, grated 8 thin sliced bacon strips
    1 package (8 oz.) cream cheese, softened salt and ground black pepper
    1 pound hot Italian sausage, bulk

      Prepare rice according to package directions.

      Preheat oven to 400 degrees.

      In a large bowl, combine the cheeses, sausage and cooked rice. Mix well.

      Stuff each poblano pepper half with mixture.

      Wrap pepper with a slice of bacon.

      Place eight pepper halves on a baking sheet.

      Bake 25 minutes. Turn on broiler and cook for approximately 5 minutes or until bacon is crisp.

    notes

     Tip: Substitute bell peppers instead of poblano peppers.
