| 1/4 cup coconut milk | 1 tablespoon peanuts, crushed | |
| 1 teaspoon curry powder | 1 tablespoon prepared chutney (optional) | |
| 1 cup Asian-style frozen vegetables, thawed |
Prepare rice according to package directions.
In a small microwave-safe bowl combine coconut milk and curry powder. Add vegetables and chicken. Microwave on HIGH 2 minutes.
Fold in rice.
