Megan Myers believes that eating delicious and locally-grown food is possible, even for busy moms like her. Her blog, Stetted, is all about wholesome recipes, and these Strawberry Doughnuts are a prime example of her cooking style. By baking instead of frying and sweetening with maple syrup and raw sugar, Myers has come up with a doughnut that you can feel good about giving to your little ones.
|1 cup whole wheat pastry flour||1/3 cup milk|
|1/3 cup raw sugar||1 egg|
|1 teaspoon baking powder||1 tablespoon butter, melted|
|1/4 teaspoon cinnamon||1/3 cup diced strawberries|
|1/2 teaspoon salt||1 tablespoon pure maple syrup|
Preheat the oven to 425°F and grease a dougnut pan.
In a small bowl, stir together the berries and syrup. In a large bowl, mix together the dry ingredients, then add the milk, egg, and butter, stirring until just combined. Add the berries. Fill each cup about 2/3 full.
Bake for 7 to 9 minutes, until tops spring back.
Let cool for 5 minutes before removing from the pan. Eat as is or dip in chocolate glaze if you're feeling naughty.
