| 1 sheet puff pastry, thawed to package instructions | Granulated sugar, for sprinkling | |
| 1/2 of a 7-ounce log of almond paste | Confectioners' sugar, for sprinkling | |
| Fresh strawberries, green cap sliced off to create a flat edge |
Preheat oven to 425 degrees F. Using small round cookie cutters, cut out circles from the puff pastry that are slightly larger than the widest part of your strawberries. Arrange them on a parchment-lined cookie sheet.
Pinch off pieces of the almond paste and flatten them into rounds the size of the base of your strawberries. Lay the almond paste coins on the center of the puff pasty circles and top each with a single berry, pressing down lightly. Sprinkle each berry with a pinch of granulated sugar.
Bake 14 to 16 minutes, or until the pastry is puffed up and light golden brown. Remove puffs from oven, sprinkle with confectioners’ sugar and serve immediately.
