"Tonight I had two zucchini that had gotten away a bit over the weekend so they were a bit further along and firmer than they might have been…I chopped them into bite-sized pieces and sauteed them with olive oil, onion, garlic and a little salt and pepper until just almost cooked. Then I added about 1/4 cup of heavy cream and sprinkled the top generously with Parmesan cheese.
