chime in nowIf you’ve got a garden, or a neighbor or friend with a garden, you probably have the same problem every summer: too much squash! Here are some tasty ideas from iVillage members for ways to use up your summer squash.
"Tonight I had two zucchini that had gotten away a bit over the weekend so they were a bit further along and firmer than they might have been…I chopped them into bite-sized pieces and sauteed them with olive oil, onion, garlic and a little salt and pepper until just almost cooked. Then I added about 1/4 cup of heavy cream and sprinkled the top generously with Parmesan cheese. I put the lid on and let it sit for about 15 minutes on the hot burner with the heat turned off."—iam3killerbs
