Fresh garlic, parsley, butter, and parmesan cheese combine to create a heady spread for toasty bread. Only true garlic lovers need apply.
Regan Burns Cafiso
| 1/2 baguette, split lengthwise | 1 tablespoon minced parsley | |
| 1 tablespoon olive oil | 1/2 teaspoon finely grated lemon zest | |
| 4 medium garlic cloves, mashed to a paste with a generous pinch of salt | 1/3 cup grated Parmigiano-Reggiano cheese | |
| 2 tablespoons butter, room temperature |
Heat broiler and position oven rack 5 inches from flame. Combine olive oil and garlic paste in a small saucepan and heat over medium low until garlic begins to gently sizzle, about 3 minutes (do not brown garlic.) Remove from heat and transfer mixture to a small mixing bowl; let cool. Add butter, parsley, lemon zest and grated cheese and stir with a spatula until evenly combined.
Place baguette halves cut-side up on a baking sheet. Broil until lightly toasted, about 1 minute; remove from oven. Spread half the garlic-butter paste on each piece of bread, taking care to cover the edges. Broil until cheese is bubbly and browned and bread is toasted, 2 to 3 minutes. Remove from oven, slice, and serve.
