Tapas, or "little bites," are a staple at most bars and casual restaurants in Spain. They're flavorful dishes — mostly vegetables, sometimes seafood, meats and sausages — generally served at room temperature. Some bars present tapas buffet-style and encourage diners to fill their own plates, while other restaurants offer them a la carte. I've assembled a few of my favorite recipes — basic yet delicious, and crowd pleasing too. The addition of a bowl of Spanish olives, as well as almonds and a small board with two or three Spanish cheeses, would complete this menu and make it a meal.
