Too Many Tomatoes? 4 Great Recipes!

It's tomato season, and there is nothing better than a fresh tomato from the garden -- so sweet! If you have too many tomatoes or are just looking for some great new recipes, here four are wonderful ways to turn an abundance of tomatoes to advantage.

1. Tomato Feta Appetizer
Serves 4

  • 4 ounces crumbled feta cheese
  • 1 cup chopped plum tomatoes
  • 1 tablespoon pine nuts
  • 1/3 cup cilantro, chopped
  • 1 tablespoon olive oil

In a bowl, combine ingredients and serve on toasted sliced French bread or crackers. May also be served presented with zucchini rounds or on the end of endive spears for a plated hors-d'oeuvre.

2. White Beans with Escarole and Tomatoes
Serves 4 as a side dish and 2 as a main course

  • 2 tablespoons olive oil
  • escarole
  • 3 small garlic cloves or 1 large clove
  • 15-ounce can white kidney beans
  • 2 cups chopped tomatoes

Heat olive oil in a saute pan over high heat; once hot, add garlic and escarole and stir. Once escarole has wilted, add beans and tomatoes. Continue stirring while reducing heat to medium-low and simmer for approximately 8 minutes or until tomatoes have formed a sauce. Serve as either a side dish or over cooked pasta or rice as a main course.

3. Yellow Squash with Corn and Tomatoes
Serves 4 as a side dish

  • 2 tablespoons olive oil
  • 1 large shallot
  • 1 cup cooked corn (2 ears)
  • 1 yellow squash (2 cups)
  • 1 tablespoon Worcestershire sauce
  • 1 cup chopped tomatoes

Heat olive oil in a saute pan over high heat; once hot, add shallots. Stir until shallots are translucent and then add squash. Continue to stir mixture and add corn and tomatoes once squash is cooked. Season with Worcestershire sauce and continue to cook over medium-low heat for an additional 5 minutes or until tomatoes have softened. Serve as a side dish for veal, chicken, shellfish or a mild fish such as flounder.
