    2 cups unbleached all purpose flour 1/2 cup your favorite marinara sauce
    1 tsp kosher salt 1 8-oz bag mozzarella cheese
    2 Tbs olive oil Toppings: pepperoni, diced bell pepper, diced ham, basil
    1/2 cup water

      Preheat the oven to 500 and preheat a pizza stone in the oven if you have one.

      Whisk the flour and salt together, then drizzle the 2 tablespoons oil and 1/2 cup water into the flour and stir until a soft, shaggy dough forms.

      Turn the dough out onto a well-floured surface and divide in half. Roll one dough ball out into a rough 10-inch square, then slice with a pizza or pastry cutter into 2-inch squares.

      Place as many dough squares as possible on the pizza stone and cook for about 5 minutes, until puffy and golden brown in spots. If you don’t have a pizza stone, transfer the dough rounds to two large baking sheets for cooking.

      Transfer the cooked crackers to a wire rack.

      Set an oven or toaster oven to broil and line a baking sheet with foil.

      Line the crackers on the prepared baking sheet. Top each cracker with about 1/2 teaspoon sauce and a pinch of mozzarella sauce.

      Broil for about 5 minutes to melt the cheese.

      Crackers can be stored separately and broiled fresh in a toaster oven on site, or prepared in advance and refrigerated overnight. Bring to room temperature before serving or heat in a 250 toaster oven for 5 minutes.

      To serve, set up a topping bar with small bowls of diced pepperoni, ham, and green peppers, or other toppings. Allow kids to personalize their pizza crackers.
