| 1/2 cup pureed mango, for dressing | 1 teaspoon Worcestershire sauce, for dressing | |
| 2 tablespoons fresh lemon juice, for dressing | 1/2 teaspoon minced anchovy, for dressing | |
| 1 tablespoon minced garlic, for dressing | 1/4 teaspoon freshly ground black pepper, for dressing | |
| 1 tablespoon grated parmesan cheese, for dressing | 4 slices banana bread, cut into cubes (see recipe) | |
| 2 teaspoon extra virgin olive oil, for dressing | 8 tabloespoons grated Parmesan cheese, for salad |
Place all ingredients for Tropical Caesar Dressing in a blender and mix until well combined.
Toast banana bread cubes in toaster oven or conventional oven set to 350° until crisp.
In a large bowl, toss together lettuce and dressing.
Evenly divide salad onto 8 plates. Top each salad with 2 tablespoons banana bread croutons and 1 tablespoon parmesan cheese.
