Be sure to use coconut milk, not cream of coconut, which is thick and sweetened. You can use canned pineapple chunks but be sure to buy the ones in their own juice, not in syrup. You can add a few ice cubes while the blender is running if you want the smoothie thicker.
|1 cup coconut milk||1 large banana, peeled, cut into chunks, and frozen|
|1 cup fresh pineapple chunks||Juice of 1 lime|
Put the ingredients in the blender in the order listed and puree until smooth and creamy.
Pour and serve.
