Turkey-Herb Meatballs

These tasty meatballs will be a hit with the whole family, but if you happen to have leftovers they freeze well. Wrap each meatball individually in foil and place them all in a zip-top bag.

    1 pound ground turkey 1 egg
    1 garlic clove, chopped 3/4 teaspoon salt
    1/3 cup panko or other dried breadcrumbs freshly ground pepper to taste
    1/4 cup ketchup up to 1 cup finely chopped fresh herbs and/or vegetables, like scallions, onion, green bell pepper, parsley, oregano, or basil

      Preheat oven to 400º. Line a baking sheet with parchment paper.

      In a large bowl mix together all of the ingredients and whatever vegetables or herbs your using.

      Form eight meatballs with your hands and place them on the baking sheet. Bake for 30 minutes or until the interior of the meatballs reaches 165°F.

      Let meatballs rest for five minutes and serve.
