    3 whole sausages, chicken, or lean turkey sausage, 2-3 links 2 medium pepper(s), green, bell, (or yellow) thinly sliced
    2 medium pepper(s), red, bell, thinly sliced 3 scallion(s) (green onions), (white and green parts), thinly sliced
    2 pepper(s), red, bell, large, seeded and finely diced 1 medium onion(s), yellow, thinly sliced

      Heat pan coated with oil spray over medium heat. Add peppers and onions and sauté 8-10 minutes until soft and lightly browned.

      In a separate pan coated with oil spray, sauté sausages over medium heat until fully cooked through. Remove sausage from pan and slice into ¼-inch rounds.

      Add cut sausage to pan with cooked vegetables and sauté together for an additional 1-2 minutes over medium heat. Season with preferred herbs and ground black pepper.
