Vegetables Star in Desserts

These days, eating your vegetables isn’t much of a chore. We’ve already become accustomed to restaurants serving tasty roasted Brussels sprouts and interesting kale salads, but now veggies are migrating to dessert menus as well -- and we don’t mean carrot cake or zucchini bread. Chef Kory Stewart at San Francisco’s Americano Restaurant makes a dessert sandwich filled with ice cream that’s been infused with candy cap mushrooms, which have a subtle mushroom flavor, maple-like taste and a caramel-butterscotch scent.

New York’s high end dining spot Del Posto serves an eggplant and chocolate tart; baby eggplant slices are baked in a tart, accented with a honey and white wine vinegar glaze, served with a sheep’s milk ricotta gelato that is studded with chocolate, then topped with a sauce made from chocolate, olive oil and salt.
