Vegetarians are accustomed to the hit-or-miss hustle of trying to grab a quick bite while out and about. Most fast-food meal options are not only meaty, but generally unhealthy too.
Enter Chipotle, which has introduced a new tofu option, to meet the demand for vegetarian-friendly, healthier fare.
The offering is known as Sofritas, and is comprised of shredded tofu braised with chipotle chills, roasted poblanos, and spices -- and it's organic to boot. It works as a filling for burritos, tacos, bowls and salads.
It may not be surprising that Chipotle tested the tofu experiment first in California, where Sofritas brought in close to 5 percent of the total sales across the state. Next to receive the soy-based goodness are restaurants across the entire West Coast, by the end of this month. And assuming all goes well, additional markets will see the rollout this fall, according to Bloomberg Businessweek.
It's not just vegetarians who can be excited about tofu at Chipotle, either. The brand is hoping it will have some crossover appeal for meat eaters as well.
