This fresh and fruity take on waffles is delicious and fun for breakfast or brunch (and is certainly healthier than saturating the plate in syrup). Have the kids help cut the fruit and assemble their own towers. Feel free to swap in your family's favorite fruits.

| 4 waffles, prepared as directed from mixture | 1 cup granola | |
| 2 bananas, peeled | 4 cups vanilla yogurt (fruit yogurt also tastes great) | |
| 2 cups strawberries, hulled | 1/4 cup chopped fresh mint leaves | |
| 2 peaches |
Cut each waffle into quarters and set aside.
Cut the bananas, strawberries, and peaches into small pieces.
On 4 large plates, assemble towers starting with a waffle quarter. Use a spoon or spatula to spread 1/4 cup yogurt onto the waffle.
Next, add a layer of banana on top of the yogurt.
Place another waffle quarter on top and smear another 1/4 cup of yogurt.
Add a layer of strawberries and top again with a waffle quarter and another smear of 1/4 cup yogurt.
Add some peaches on top.
Place final waffle quarter on top and smear another 1/4 cup yogurt on as well.
Sprinkle 1/4 cup of granola on top and garnish with fresh mint, to taste.
Dig in with care and a big appetite!
