    Ingredients

    1 small (4 pound) seedless watermelon, cubed 2 tablespoons fresh lemon juice
    3/4 cup mint leaves, cleaned 2 tablespoons white wine vinegar
    3/4 cup basil leaves, cleaned 1/4 cup extra virgin olive oil
    1/2 medium red onion, thinly sliced 1 teaspoon Dijon mustard
    4 ounces Cotija or feta cheese, crumbled Salt and pepper to taste

      Add lemon juice, vinegar, olive oil and mustard to a jar and seal. Shake vigorously. Add salt and pepper to taste and shake again.

      Place watermelon, mint and basil leaves, red onion and cheese into a bowl. Drizzle with vinaigrette, toss gently and serve.
