Ideal for hot summer days, sweet, juicy watermelon goes perfectly with salty Cotija cheese and the strong herbaceous flavors of mint and basil. A citrus vinaigrette puts the finishing touch on this fruity salad.
|1 small (4 pound) seedless watermelon, cubed||2 tablespoons fresh lemon juice|
|3/4 cup mint leaves, cleaned||2 tablespoons white wine vinegar|
|3/4 cup basil leaves, cleaned||1/4 cup extra virgin olive oil|
|1/2 medium red onion, thinly sliced||1 teaspoon Dijon mustard|
|4 ounces Cotija or feta cheese, crumbled||Salt and pepper to taste|
Add lemon juice, vinegar, olive oil and mustard to a jar and seal. Shake vigorously. Add salt and pepper to taste and shake again.
Place watermelon, mint and basil leaves, red onion and cheese into a bowl. Drizzle with vinaigrette, toss gently and serve.
