Ideal for hot summer days, sweet, juicy watermelon goes perfectly with salty Cotija cheese and the strong herbaceous flavors of mint and basil. A citrus vinaigrette puts the finishing touch on this fruity salad.

| 1 small (4 pound) seedless watermelon, cubed | 2 tablespoons fresh lemon juice | |
| 3/4 cup mint leaves, cleaned | 2 tablespoons white wine vinegar | |
| 3/4 cup basil leaves, cleaned | 1/4 cup extra virgin olive oil | |
| 1/2 medium red onion, thinly sliced | 1 teaspoon Dijon mustard | |
| 4 ounces Cotija or feta cheese, crumbled | Salt and pepper to taste |
Add lemon juice, vinegar, olive oil and mustard to a jar and seal. Shake vigorously. Add salt and pepper to taste and shake again.
Place watermelon, mint and basil leaves, red onion and cheese into a bowl. Drizzle with vinaigrette, toss gently and serve.
