This vegetarian tomato sauce couldn’t be simpler, and it’s ten times better than anything you’ll get out of a jar. You don’t even have to sauté any onion and garlic. The butter in the sauce rounds it out and makes it taste sweet, mild and long-stewed. You’ll never know it’s in there, but you’d miss it if you skip it. Serve it on top of any type of pasta, with a generous sprinkle of grated Parmesan.
