White Chocolate-Peppermint Fudge

Fudge made in the microwave is much easier than the kind you have to boil on the stovetop, so you can easily make several batches at once. The minor tradeoff is that you must store it in the refrigerator, so it’s a particularly good gift to take along to a holiday party, where the recipient can put the goodies straight into cold storage. White chocolate shows off the flavor of real peppermint oil, but this recipe is equally good if you use bittersweet chocolate chips.
