| 1/2 teaspoon gelatin, bloomed in cool water |
Boil water and remove from heat. Add bloomed gelatin, then whisk in the chocolate with a burr mixer over ice water until the mixture thickens and turns a light brown chestnut color.
Allow to chill for 4 hours for the mousse to set.
