chime in nowHarvard professor David Edwards says that food of the future will package itself, and his upcoming product, WikiCells, is making that vision a reality. WikiCells are edible forms of food packaging that can encase liquid and pudding-like products in a mess-free, natural skin (think grapes or eggs). Even better, small particles of chocolate, fruit, nuts or other tasty ingredients can be added to the skin to help the packaging contribute to the eating experience. One of the first commercially available WikiCells products will be ice cream encased in a fudge membrane that you can hold in your hand, bite into, or even poke with a straw to drink like a milkshake — proving that reducing packaging waste can be a delicious process.
