| 2 cups all-purpose flour | 1 cup superfine sugar | |
| 1/2 teaspoon baking powder | 1 egg | |
| Pinch of salt | 2 teaspoons vanilla extract | |
| 1/2 cup sweet butter | Royal icing and food colors, to decorate |
Sift the flour, baking powder, and salt together in a bowl. In a separate bowl, beat the butter and sugar until light and fluffy. Add the eggs and vanilla. Stir in the flour mixture until incorporated, and knead lightly until combined. Divide the dough in half, flatten each half into a patty, wrap in parchment, and refrigerate until firm.
Preheat oven to 350 degrees F. Roll the dough between two lightly floured plastic sheets or parchment to ⅛ inch thick. Using a floured witch's hat cutter or a plastic stencil, cut out cookies and put onto the baking sheets 1 1/2 inch apart. Bake for 8 to 10 minutes.
Transfer to a wire rack. When completely cool, decorate with icing. Store in an airtight container for 5 to 7 days.
